Diet food stuffs

Here are some foods that I cooked the first day I resumed the slimming world plan.

I hadn't had time to go to Tesco, so I had to make do with what I had available. For my lunch I had a can of baked means (cold) and a slice of toast. Also cold. Thankfully I like it! 

It was a work day, which also meant that I had to plan a for dinner that evening, I made a big quiche. The recipe roughly goes like this:

16 rashers of smoked back bacon - all visible fat removed.
60g grated Parmesan cheese (30g is a healthy a choice)
7 eggs
1 large onion
2 peppers
chives
2 courgettes
1 tbsp of mustard powder that I think fills in for a cheese taste.

I was going to make a basic bacon quiche without pastry but as I was preparing to chop up the bacon I got a brain wave and used the bacon rashers to line the quiche dish


 I then sprinkled over about 1/3 of the Parmesan and then put the mixture (which included most of the Parmesan) into the dish and sprinkled the last little bit on top.
 

It took about an hour to cook, but I had it about 170 degrees. Its hard to tell with my oven because its going up the spout. One minute everything's rosy and the next there's smoke billowing out the front grill :-s


 It smelt absolutely divine too. I covered it loosely with foil and left for work.


It was yummy. I served it with romaine lettuce and boiled potatoes. My syns for the day were spent on salad cream. 7.5 syns of salad cream is not good, but without it this baby would never have gone down. 

I resolved to buy some low fat options very very soon!

I had 1/8th of this quiche, 2 and a half boiled potatoes and some lettuce.

For the people in my life who dont need to diet... that visible fat gotdeep fried and they tucked into one of my FAVORITES... bacon grits. Groan. Just for your food porn pleasure:
